Healthy Loaded Cowboy Dinner Cheeseburger Casserole

Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 cup tomato sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup plain Greek yogurt
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat and brown the ground beef until fully cooked.
  3. Add onion, bell pepper, and garlic. Cook until softened and fragrant.
  4. Stir in black beans, corn, tomato sauce, chili powder, cumin, salt, and pepper.
  5. Transfer the mixture into a greased baking dish.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Bake for 20 minutes, until cheese is melted and bubbly.
  8. Remove from oven and top with Greek yogurt and fresh cilantro before serving.
