Method
- Preheat oven to 350°F (175°C) and line a muffin pan with liners.
- Blend cottage cheese until completely smooth.
- Add eggs and vanilla to the cottage cheese and mix well.
- In a separate bowl, whisk almond flour, sweetener, cinnamon, baking powder, and salt.
- Combine dry ingredients with wet ingredients until fully mixed.
- Fold in chopped pecans.
- Divide batter evenly into 12 muffin cups.
- Bake for 22–25 minutes, or until a toothpick comes out clean.
- Cool for 10 minutes before serving.
