Keto Cinnamon Pecan Cottage Cheese Muffins

Ingredients
  

  • 1 cup full-fat cottage cheese blended smooth
  • 3 large eggs
  • 1 cup almond flour
  • cup keto sweetener erythritol or monk fruit
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans
  • ¼ teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin pan with liners.
  2. Blend cottage cheese until completely smooth.
  3. Add eggs and vanilla to the cottage cheese and mix well.
  4. In a separate bowl, whisk almond flour, sweetener, cinnamon, baking powder, and salt.
  5. Combine dry ingredients with wet ingredients until fully mixed.
  6. Fold in chopped pecans.
  7. Divide batter evenly into 12 muffin cups.
  8. Bake for 22–25 minutes, or until a toothpick comes out clean.
  9. Cool for 10 minutes before serving.
