Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini
  • 1 red bell pepper
  • ½ cup cherry tomatoes
  • ¼ cup Kalamata olives
  • 1 tsp oregano
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup feta cheese
  • 2 tbsp parsley
  • ½ lemon juice

Method
 

  1. Heat skillet and brown ground beef.
  2. Add garlic and onion and cook until fragrant.
  3. Stir in zucchini, bell pepper, and tomatoes.
  4. Add spices and cook until vegetables soften.
  5. Stir in olives and lemon juice.
  6. Top with feta and parsley and serve warm.
