- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a blender or food processor, blend the cottage cheese and egg until smooth.
- Transfer the mixture to a bowl and add almond flour, baking powder, salt, and chopped spinach. Mix until a soft dough forms.
- Divide the dough into 6 equal portions. Shape each portion into a ball, then gently press a hole in the center to form a bagel shape.
- Place the bagels on the prepared baking sheet and sprinkle with everything bagel seasoning if desired.
- Bake for 20–25 minutes until golden brown and firm to the touch.
- Allow to cool slightly before slicing and serving.
