Notes

Adjust the spice level: If you prefer a milder dish, remove the seeds and membranes from the jalapeños before slicing. For extra heat, keep the seeds or add a pinch of crushed red pepper flakes.
Use full-fat ingredients: Full-fat cream cheese and cheddar cheese provide the best creamy texture and are ideal for keto macros.
Freshly shredded cheese melts better: Pre-shredded cheese often contains anti-caking agents that can make the sauce slightly grainy.
Add bacon for classic jalapeño popper flavor: Crumbled crispy bacon sprinkled on top adds extra flavor and texture.
Don’t overcook the jalapeños: Cooking them briefly keeps a slight crunch and preserves their bright flavor.
Make it a full meal: Serve the stir fry over cauliflower rice or alongside roasted vegetables for a more filling keto dinner.
Storage tip: This recipe stores well in the refrigerator for up to 4 days. Reheat gently on the stove or microwave with a splash of cream to maintain the creamy texture.
Meal prep friendly: You can cook the ground beef mixture ahead of time and reheat it with the cream and cheese when ready to serve.
