Preheat oven to 350°F (180°C) and line a baking sheet.
Blend cottage cheese until smooth.
In a bowl, combine flour, baking powder, and salt.
Add blended cottage cheese and mix until a soft dough forms. If sticky, add extra flour 1 tbsp at a time.
Divide dough into 10–12 pieces. Flatten each into a small disk.
Place a cube of mozzarella (and optional fillings) in the center. Add a dab of pizza sauce if desired.
Seal the dough around the filling and roll into a smooth ball.
Place rolls on the baking sheet, brush with olive oil, and sprinkle with Italian seasoning and Parmesan.
Bake 18–22 minutes until golden and puffy.
Cool 3–5 minutes, then serve warm with extra pizza sauce if desired.
