Stuffed Cottage Cheese Pizza Rolls

Soft, cheesy stuffed cottage cheese pizza rolls with gooey mozzarella inside – perfect snack, appetizer, or party treat. Easy, high-protein, and customizable!

Ingredients
  

  • 1 cup cottage cheese blended smooth
  • 1 cup all-purpose flour or gluten-free 1:1 flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 120 g mozzarella cheese cut into small cubes
  • Optional fillings: pepperoni slices cooked sausage, sautéed veggies
  • 2 tbsp pizza sauce optional for filling or dipping
  • 1 tbsp olive oil for brushing
  • 1 tsp Italian seasoning
  • 2 tbsp grated Parmesan optional topping

Method
 

  1. Preheat oven to 350°F (180°C) and line a baking sheet.
  2. Blend cottage cheese until smooth.
  3. In a bowl, combine flour, baking powder, and salt.
  4. Add blended cottage cheese and mix until a soft dough forms. If sticky, add extra flour 1 tbsp at a time.
  5. Divide dough into 10–12 pieces. Flatten each into a small disk.
  6. Place a cube of mozzarella (and optional fillings) in the center. Add a dab of pizza sauce if desired.
  7. Seal the dough around the filling and roll into a smooth ball.
  8. Place rolls on the baking sheet, brush with olive oil, and sprinkle with Italian seasoning and Parmesan.
  9. Bake 18–22 minutes until golden and puffy.
  10. Cool 3–5 minutes, then serve warm with extra pizza sauce if desired.

Notes

Tips & Variations

  • Keto Option: Replace flour with almond flour + 1 egg for a low-carb version.
  • Veggie Stuffed: Use sautéed mushrooms, peppers, or spinach (drain moisture first).
  • Extra Crisp: Bake 2–3 minutes longer for crispier edges.
  • Freezing: Bake first, cool completely, freeze, and reheat in oven or air fryer.
